Cincinnati chili meets the Pacific Northwest

Chef Derek Saner's love of the local favorite led him to open a restaurant in his new hometown.

Cincinnati native Derek Saner brought his love of hometown chili to Vancouver, Wash., with the opening of his new restaurant, Slow Fox.

Saner lived and worked around Greater Cincinnati and Northern Kentucky and, as he says, “there was always a chili parlor in my life.” When he first moved to Portland to be a chef, he missed it, which led to him opening his own place.

And although Cincinnati chili — and its colloquialisms — has caused some confusion in the Pacific Northwest, Saner’s goal is to attract a variety of customers, so he serves other slow-cooked meals — including vegan options — alongside his hometown favorites.
